dark chocolate mousse cake with raw nut bottom
bottom:
2.5dl / 1cup hazel nuts
8-10 dried soft pitted dates
1.5dl / 0.65cup almond flour
1dl / 0.45cup water or coffee (i used water since i don’t like coffee)
0.5dl / 0.25 cacao (100%)
1/4tsp salt
1tsp vanillasugar
30g / 1oz dark chocolate (I used 72%)
Soak the nuts&dates overnight/few hours then blend them with hand blender (or if you have you can use a food processor). Grind the chocolate and blend all the ingredients together. Put a baking sheet in the bottom of your springform cake pan and grease the sides with oil (I used coldpressed canola oil). Put the dough on the pan and flatten it tight with your fingers.
mousse:
250g / 8.8oz dark chocolate (I used 72%)
300g / 10.5oz soft tofu
1tsp vanillasugar
2tbs milk
1/8tsp salt
2-3tbs honey
Melt the chocolate(be careful not to burn it). Mash the tofu with hand blender and add the chocolate. Mix it well (with a licker?XD anything will work though) and add rest of the ingredients+mix again! Check the sweetness and pour it on top of the bottom. Use the licker to make the coating even. Put it in the fridge for at least overnight! (2 nights made it even better in my taste but it’s hard to wait that long as this is so delish…)
Decorate it the day you serve it for the best look!
Top with anything you like but I recommend something fresh because the dark chocolate is really intense(depending what % chocolate you used)! I topped mine with lighter whipped cream, chocolate raisins and strawberries as you can see but you could go with something healthier like more fruit&nuts! The cake was topped for my mums taste as it’s mothers’ day! :) My springform cake pan was 24cm / 9.4inch so the cake was quite low&wide but as I used so dark chocolate the cake was really substantial/heavy so it was the perfect size in my opinion! AND I could put more toppings because it was wider ;)
ps. you can’t taste this is healthier cake(no white flour, butter or white sugar) and no one will ever guess there is tofu in it! please try this it’s truly amazing!
